Quick Affordable Student Meals – Free Spring Recipe

It is Spring, the warmer weather suits for quick, easy and affordable student meals – think salads, soups and pastas! You could even take your meal to the outdoor courtyard or rooftops at Urbanest to enjoy with friends.

We get it. You have so much to cover, classes to get to and that vending machine is tempting you for a quick sugar loaded fix to keep you going. There is an alternative, try recharging your battery with some flavoursome quick and easy to prepare meals.

Kurt’s recipe: Smoked Salmon Foccacia Sandwich

Ingredients (What you will need)

Quick affordable student meals student accommodation Australia
  • Foccacia bread
  • Smoked Salmon from Tasmania
  • Red coral lettuce
  • Avacado
  • Tomoatoes
  • Spanish onions
  • Caperberries
  • Sour cream
  • Olive oil
  • Dill (for garnish!)

Method (No cooking, make this meal in minutes!)

  1. Lightly toast focaccia bread for a slight crust
  2. From here all ingredients are cold…
  3. Add coral red lettuce, sliced tomatoes and sliced half avocado (save half!)
  4. Layer the Tasmanian smoked salmon
  5. Add red onion and caperberries (as many as suits your taste!)
  6. Dollop of sour cream
  7. Drizzle with olive oil
  8. Garnish with some dill
  9. Serve as an open style sandwich
  10. …and enjoy!

Student budget tip

Save half the avocado and enjoy a smashed avo on toast for brekky the next day, OR, if you still have salmon left over you could start the day with salmon and poached eggs!
